1 cup cornflakes, lightly crushed
3/4 cup grated Parmesan cheese
Salt and Pepper
3 large eggs, beaten
4 6 ounces skinless, boneless chicken breast halves
5 tablespoons extra-virgin olive oil
Preheat oven to 350 degrees. Combine the cornflakes, Parmesan cheese and 1/4 teaspoon each of salt and pepper. Place the effs in a shallow pan to coat the chicken breast. Then when coated coat them in the corn flake mixture on both sides. Place into heated skillet with the extra virgin olive oil in it. Cook till brown on both sides.
